Pothos (Epipremnum aureum) is one of the easiest houseplants to grow. It's tolerant of a wide variety of conditions, so you can put it in the lower light areas of your home and be confident that it will thrive (make sure there is at least some light, however).
Snake Plant (Sansevieria) is one of those plants you can grow in many places. As one of the hardiest houseplants it makes an excellent addition to any room with even a shred of light. If you want to keep it in a room with no windows simply purchase a full spectrum LED grow light and your snake plant will love you.
Prayer Plant (Maranta leuconeura) is one of our personal favorites. Every night the leaves angle upward and bunch together - sort of like hands in prayer. Then, in the morning they're all down again. It's pretty funny to see it happen. My wife and I have our prayer plant in a partially-lit windowsill, and we definitely recommend this one for your space.
It depends on the amount of windowlight you have available. If you have windows with plenty of sky exposure you probably won't need a full spectrum LED grow light. If the space where you want to keep the plants has no window light available then you should definitely purchase a full spectrum grow light (there are plenty of good options).
Your watering regime will vary from plant to plant. That said - most plants generally need less water in the winter as they go somewhat dormant to save energy. A good rule of thumb is to reduce your frequency and amount of watering. After all, you can always water more, but you can't 'un-water' plants.
